Chitosan is a natural preservative that easily forms a film, and the film has a certain selective permeation effect on O2, CO2, C2H4, as well as moisturizing function, which can effectively put fruits to sleep and prolong their shelf life. Different fruits require different amounts of oxygen for respiration, and the coating formed can have different permeability by changing the concentration of the spray agent. Therefore, it can be widely applied to the preservation of fruits and vegetables.

 

Case 1: Chitosan can be used for tomato preservation. Chitosan with a concentration of 2% can be used to coat tomatoes. After 15 days of storage, it was found that the total acidity, total sugar content, and vitamin C content of tomatoes coated with chitosan were similar to those of the original tomatoes, and the storage effect was better than that of 0.2% sodium benzoate solution.

 

Case 2: Chitosan can be made into a "nutrition saver" spray solution, which can be sprayed on the newly picked fruit to form a film. The film has micropores that allow only an appropriate amount of oxygen to pass through, effectively putting the fruit to sleep and extending its shelf life. Different fruits require different amounts of oxygen for respiration, and the thin film formed by changing the concentration of chitin solution can have different permeability. Generally, fruits can be kept fresh by chitin spray solution.

 

Case 3: Using mangoes as test materials, the effect of chitosan coating treatment on the preservation of mangoes at room temperature (30 ± 2 ) was studied. The results showed that chitosan coating could significantly inhibit the color change of mango peel, reduce fruit decay and water loss, and maintain high fruit hardness and V-C content. At the same time, chitosan coating prevents the accumulation of soluble sugars and titratable acid degradation, thereby delaying the ripening process of mangoes, extending their storage period, and maintaining their original sweet and delicious flavor. Among them, 1.5% chitosan treatment has the best effect.

 

Case 4: Chitosan preservative was tested for grape preservation using a coating agent. The results showed that Co2+ions had the best effect, with low cost and simple and convenient operation. In addition, chitosan with a molecular weight of 10000 to 100000 had the most significant anti-corrosion effect on strawberries at a concentration of 2%.

 

 

The research results of Case Four on the preservation of kiwifruit at room temperature using chitosan coating show that the use of chitosan coating can significantly improve the freshness period of the fruit. The fruit is soaked in chitosan aqueous solution for 30 seconds, taken out and dried in a ventilated place. The next morning, it is sealed and packaged in polyethylene film bags and stored in corrugated cardboard boxes. At room temperature, the longest storage period for blank samples is 8-12 days, while using chitosan aqueous solution for preservation can be extended to 70-80 days.

 

 

Case 5: Treating cucumbers with 2.0% chitosan can achieve a shelf life of 20 days. Processing green peppers can be stored for 25 days or even longer. The experimental results on amaranth, chives, and green vegetables showed varying degrees of freshness preservation.
